Gingered Holiday Chutney
Sweet, tangy, and totally giftable.
Fresh Anjou pears, sweet and hot peppers, raisins, and candied ginger simmered in brown sugar and vinegar into a gorgeous holiday chutney. Makes an excellent homemade gift.

Ingredients
- 2 cups packed brown sugar
- ⅓ cup vinegar
- ¾ teaspoon salt
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground red pepper
- 1 lime
- 1 lemon
- 1 lb fresh Anjou pears, pared and coarsely chopped (about 3 cups)
- 1 cup chopped green pepper
- 1 cup chopped sweet red pepper
- 1 cup chopped onion
- 1 tablespoon chopped candied ginger
- 1 cup light raisins
Instructions

In a saucepan combine brown sugar, vinegar, salt, cinnamon, and red pepper. Bring to boiling. Simmer, uncovered, 10 minutes.

Finely shred peel from lime and lemon; squeeze juice. Add peel, juice, pears, peppers, onion, ginger, and raisins.

Simmer uncovered, stirring occasionally, until mixture thickens. Cool; store in refrigerator.
