Potatoes Supreme

Mashed potatoes elevated to supreme status.

Fluffy mashed potatoes with cheese, egg, and a Parmesan breadcrumb topping. Can be made ahead and refrigerated — perfect for holiday entertaining.

Ingredients

  • 6 medium potatoes (2 lbs.), cooked and cubed
  • 2 eggs
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon fine dry bread crumbs
  • 2 teaspoons margarine or butter, melted
  • 1 tablespoon chopped onion
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 cup milk
  • 1½ cups (6 oz) shredded cheese

Instructions

    Spray baking dish with nonstick coating.

    Cook potatoes, onion, salt, and pepper in a small amount of water until tender; drain. Mash potatoes.

    Add egg, cheese, bread crumbs, and milk gradually, beating until fluffy. Spoon into baking dish; sprinkle with remaining cheese.

    Bake at 375°F for 20–25 minutes or until heated through.

📝 Make ahead: Cover and refrigerate up to 24 hours. Bake chilled mixture at 350°F for 45–60 minutes.
