Potatoes Supreme
Mashed potatoes elevated to supreme status.
Fluffy mashed potatoes with cheese, egg, and a Parmesan breadcrumb topping. Can be made ahead and refrigerated — perfect for holiday entertaining.

Ingredients
- 6 medium potatoes (2 lbs.), cooked and cubed
- 2 eggs
- 1 tablespoon grated Parmesan cheese
- 1 tablespoon fine dry bread crumbs
- 2 teaspoons margarine or butter, melted
- 1 tablespoon chopped onion
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 1 cup milk
- 1½ cups (6 oz) shredded cheese
Instructions

Spray baking dish with nonstick coating.

Cook potatoes, onion, salt, and pepper in a small amount of water until tender; drain. Mash potatoes.

Add egg, cheese, bread crumbs, and milk gradually, beating until fluffy. Spoon into baking dish; sprinkle with remaining cheese.

Bake at 375°F for 20–25 minutes or until heated through.
