Sesame Holiday Vegetables

Fennel, mixed frozen vegetables, and celery tossed with toasted sesame seeds, olive oil, and lemon juice. Festive, healthy, and ready in minutes.

Ingredients

  • 2 small fennel bulbs, cut into wedges
  • 1 (16-oz) package frozen mixed vegetables (broccoli, baby carrots, water chestnuts)
  • 2 cups sliced celery
  • 1 tablespoon sesame seed
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ⅛ teaspoon pepper

Instructions

    Cook fennel in a small amount of boiling water until tender; drain.

    Cook frozen vegetables as directed on package; drain.

  3. 3

    In skillet, cook sesame seeds in oil until lightly browned.

  4. 4

    Add vegetables, lemon juice, salt, and pepper. Toss gently and heat through.
