Romaine, Belgian endive, cucumber, mushrooms, and avocado drizzled with a sweet-tart cranberry vinaigrette. Simple, elegant, and perfectly seasonal.

Ingredients
- Romaine or leaf lettuce
- Belgian endive
- Cucumber slices
- Mushrooms
- Red pepper strips
- Alfalfa sprouts
- Avocado slices
- ½ cup cranberry juice cocktail
- 2 tablespoons salad oil
- 1 tablespoon red wine vinegar
- 1 teaspoon sugar
- ½ teaspoon salt
Instructions

Combine cranberry juice cocktail, salad oil, red wine vinegar, sugar, and salt; mix well.

Arrange salad greens and vegetables on plates.
