Winter Greens with Cranberry Vinaigrette

The salad that makes the whole table look good.

Romaine, Belgian endive, cucumber, mushrooms, and avocado drizzled with a sweet-tart cranberry vinaigrette. Simple, elegant, and perfectly seasonal.

Ingredients

  • Romaine or leaf lettuce
  • Belgian endive
  • Cucumber slices
  • Mushrooms
  • Red pepper strips
  • Alfalfa sprouts
  • Avocado slices
  • ½ cup cranberry juice cocktail
  • 2 tablespoons salad oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sugar
  • ½ teaspoon salt

Instructions

    Combine cranberry juice cocktail, salad oil, red wine vinegar, sugar, and salt; mix well.

    Arrange salad greens and vegetables on plates.

    Toss with dressing and serve immediately.
